  • A great foundational article! I would prefer different nuts such as hazelnuts, macadamia nuts, or pistachios. I’d also add some vanilla extract to the filling. Indeed, I could use white chocolate throughout and then add orange and lemon zest (or maybe berries) to make a fruity desert. My point is that this is a great basic recipe that begs to be tinkered with. My compliments.

  • I love this cake recipe but I would use just whipped cream as the filling and Chocolate Ganache as the frosting over the outside of the cake. Chocolate Ganache is very easy to make and very delicious. You just need the same amount of dark chocolate and whipping cream, ie 250gm dark chocolate to 250ml cream. Then you heat the cream to simmering point, and stir in the broken up chocolate pieces until the chocolate is completely melted and the mixture looks like a chocolate sauce. You can then stir a teaspoon of vanilla extract or a couple of tablespoons of rum/ brandy/Bailey’s Irish Cream/Tia Maria or whatever liqueur you prefer into the Chocolate Ganache mixture. Then, scrape the mixture into a bowl and beat it with electric beaters on low speed until the Ganache is thick and slightly lighter in colour. It’s now ready to spread over the cake. When I make this for a Christmas dessert cake I dust it with icing sugar and put a couple of fake holly leaves and berries on it. You can also make this cake into the French version of Christmas cake which is called ‘Buche de Noel’ or Christmas Log in English! It’s made the same way as this cake, but you cut a piece off one end and make the cake look like a log of wood. In France, they use a buttercream frosting for the filling and over the outside of the cake. I really recommend looking up the recipe 😋

So after googling why this is, quora says “boiling unopened cans of sweetened condensed milk is a method used to make caramel. The process involves submerging the unopened cans in boiling water for several hours, which causes the condensed milk to caramelize and turn into a thick, sweet caramel”. I think this explanation was missed in the article. I’d definitely like to make this recipe.
