I just googled about these “white balls” on the internet and found a very interesting article about them. It’s definitely kurut and very typical of Central Asia. Nomads eat these sour cheese balls. They are very filling and keep for a long time. When buying them, you have to make sure that they aren’t stuffed with flour! and cheese to make them cheaper. Excellent kurut is only made from cheese.

Now we live in Germany, my parents came here almost 30 years ago. Originally my ancestors lived in the Wolga region of Russia and were deported to Kazakhstan after worldwar 2, because all germans were considered traitors, even when they already lived for 200 years in Russia. Other ethnicities were also affected by this, for example koreans. Many of them ended up with nothing in Kazakhstan and the kazakh people took them in with much hospitality. There are many stories of my grandparents, where they were starving and kazakh people helped them out with food without wanting anything back. They are such generous and nice people and I wish I can someday visit this country. also Plov and Beshbarmak are my favourite dishes! 😍
The milky ball you tried is very full of calcium. And people get easily full by eating it. So our nation used to took this when they are moving to another place. So it is easy snack. That helps to stay full and energetic on their way. And still we actually love the taste of it, for you guys maybe it is too salty. But as for me I can not live without it .

Тогда она впервые поведала сотрудникам музея «АЛЖИР», как в первый раз увидела местных казахов и как они отнеслись к заключенным женщинам. Дело было в одно буранное зимнее утро. Женщины-узницы под усиленным надсмотром конвоя собирали камыш на берегу озера Жаланаш для постройки бараков. У каждой заключенной была своя норма и для ее выполнения приходилось работать по 17–20 часов в сутки. Измученные женщины буквально валились с ног, когда из зарослей камыша выскочили старики и дети — местные жители соседнего казахского села Жанашу. Старшие дали команду, и дети стали забрасывать камнями женщин. Конвоиры начали громко и жестоко смеяться: мол, видите, вас не только в Москве, вас и здесь, в ауле, даже дети не любят. «Было очень больно и обидно и, в первую очередь, морально» — вспоминает Гертруда Платайс. Такие «избиения» повторялись в течение нескольких дней. По лицам оскорбленных узниц текли слезы. I know horse meat is a local food. I get wanting to eat local foods when in a place, really. I’ve lived alongside horses for a couple of decades and I’ve been a long term breeder of heavy horses. Horses to me are quite spiritual and like cats and dogs I wouldn’t eat them. I didn’t eat cats when I lived in Thailand, for example. To me they’re in the ‘part of the family ‘ category. I can try other local foods without crossing that boundary. I realise goats and sheep other meat species are wonderful animals and intelligent and emotional. I’ve bred these too. But somehow my brain makes that distinction. I’d prefer to be vegetarian from an ethical point of view, because of that conflict, and at times I’ve been plant based. When I’ve produced meat on my farm it has been done with love, and the animals given great lives in so far as is possible. That’s my perspective. As a draft horse lover especially, horse meat is a hard topic. Horses are not generally treated ethically as meat animals around the world. Just visit an American kill pen or consider the reputation of the knacker (horse killer in Britain) if you doubt me. The shipping of horses for meat is not kind in general. In France and other countries rare local breeds are being extincted through the purchase of larger animals for the meat trade. The idea above that meat horses are not riding horses may be a reference to the use of heavy horses in the meat trade. It’s true these are breeds preferred for meat. They are used for ploughing and wagons.
