You can only get one Organic Frigate per system. They do range in class the same as Derelict Freighters. Most of them will be C-Class, but you can find S-Class. I stumbled on an S-Class about 2 weeks ago and wasn’t using an Anomaly Detector, just a random encounter.
It varies by system, but as with everything else in the game that ranges from C-Class to S-Class, C-class is the most common.
There’s not really any good reason to care that much what class they are when you recruit them for frigates. It doesn’t take very many expeditions to rank up your frigates, and it costs you nothing. They’ll all be S-class soon enough, regardless of what class they are when recruited.
